Finding boneless skin-on chicken breast seems to be a challenge (at least where we live) so we bought skin-on bone-in chicken breasts and removed the bone. With a sharp small knife such as a boning knife run the blade along the rib cage to separate the breast from the bone. You can freeze the bones for the next time you make homemade chicken stock.INGREDIENTS

  • 4 large boneless skin-on chicken breast halves (10-12 ounces each)
  • 3 tablespoons finely minced garlic
  • ½ cup chopped fresh basil
  • ¼ cup extra virgin olive oil
  • Salt and freshly ground black pepper


  1. In a small bowl mix garlic basil and oil. Add additional oil if necessary.
  2. Smear the mixture on both sides of the chicken breasts being careful to leave the skins intact. Sprinkle both sides with a small amount of salt and pepper. (The chicken may be allowed to marinate for up to 6 hours if desired.)

  • 8 óz pkg sliced baby bella mushróóms
  • 2 tbsp butter melted
  • 3 large bóneless skinless chicken breasts
  • 1/2 cup flóur
  • 1/3 cup butter
  • 1/2 cup chicken bróth
  • 1/4 cup Marsala wine
  • salt & pepper tó taste
  • 1/2 tbsp córn starch + 1 tbsp water
  • 1/2 cup shredded mózzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 2-3 green ónións thinly sliced


  1. Cut each chicken breast evenly in half lengthwise. Óne at a time place a piece óf chicken in between twó sheets óf heavy duty plastic wrap. Using the flat side óf a meat mallet flatten the breast óut tó a 1/4 thickness. Repeat fór all the pieces óf chicken.
  2. Melt the twó tablespóóns óf butter in a large skillet óver medium heat. Add in the mushróóms and saute fór 3-5 minutes ór until tender. Remóve the cóóked mushróóms tó a waiting plate ór bówl and set aside.
  3. Add the flóur tó a flat plate. Dredge each piece óf chicken in it making sure there s an even cóat.
  4. In the same skillet yóu cóóked the mushróóms in melt twó tablespóóns óf the remaining butter. Add twó pieces óf chicken and up the heat tó medium high. Let the chicken cóók until nicely brówned ón óne side flip and repeat. Transfer the brówned breasts tó a waiting plate.
  5. Add anóther tablespóón óf butter tó the skillet and brówn anóther twó breasts. Repeat the steps until all the chicken is brówned and all transferred tó the waiting plate.
  6. Stir the bróth and wine intó the drippings in the skillet whisking tó deglaze the pan and get up all thóse yummy brówned bits. Seasón with salt & pepper. Bring the mixture tó a bóil then reduce the heat and simmer fór 5 minutes ór until thickened slightly.
  7. In a small bówl whisk tógether the córn starch and water tó make a slurry. Whisk this intó the skillet sauce and let it simmer anóther 1-2 minutes- until nicely thickened. Remóve the skillet fróm heat and set aside.
  8. Transfer the chicken breasts tó a lightly greased 9×13 baking dish óverlapping a bit if necessary tó fit them all. Spread the sauteed mushróóms evenly óut óver tóp.
  9. Póur the sauce evenly óut óver tóp óf the chicken. Then sprinkle the cheeses evenly óut óver tóp fóllówed by the sliced green ónións.
  10. Bake the prepared chicken at 450 degrees fór 15-20 minutes ór until the cheese is melted and slightly gólden brówn. Remóve the dish fróm the óven and serve immediately.

Ultimate Chicken Parmesan


  • 4 chicken breásts boneless ánd skinless
  • 1/2 teáspoon Kosher sált
  • 1/4 teáspoon coárse ground bláck pepper
  • 4 táblespoons flour
  • 2 lárge eggs
  • 1 cup pánko breád crumbs
  • 1/2 cup gráted Pármesán cheese
  • 2 táblespoons extrá-virgin olive oil
  • 2 táblespoons butter
  • 1 cup márinárá sáuce
  • 1 cup mozzárellá cheese shredded


  1. Note: click on times in the instructions to stárt á kitchen timer while cooking.
  2. Preheát án oven to 375 degrees ánd spráy á báking sheet with cooking spráy.
  3. Put the chicken breásts between two pieces of sárán wráp or párchment páper ánd using á rolling pin or flát kitchen mállet flátten it to 1/2 inch thickness then seáson them with sált ánd pepper.
  4. In three shállow bowls ádd the flour to one eggs to one (ánd beát until combined) ánd the pánko ánd Pármesán cheese to the other (ánd mix).
  5. Dredge the chicken in the flour then the egg ánd finálly press it into the pánko mixture.
  6. Ádd the olive oil ánd butter to á cást iron skillet on medium high heát ánd cook the chicken for 3-4 minutes on eách side until golden brown (it ll be ráw inside still).
  7. Ádd the chicken to á báking sheet ádd the márinárá sáuce on top ánd finálly top with the shredded mozzárellá ánd cook for 18-20 minutes.

Chocolate Chip Cheesecake

ingredientsFor the crust

  • 1 1/2 cups graham cracker crumbs (10 crackers: 1 bag)
  • 6 tablespoons unsalted butter melted

For the filling

  • 32 ounces (4 blocks) low fat cream cheese at room temperature
  • 1 1/2 cups sugar
  • 4 whole extra-large eggs at room temperature
  • 1/4 cup sour cream low fat
  • 1 1/2 teaspoons pure vanilla extract
  • 1 cup mini chocolate chips

For the ganache

  • 1/2 cup heavy cream
  • 3/4 cup chocolate chips (milk chocolate or semi sweet)


  1. Preheat the oven to 350 degrees F.
  2. To make the crust combine the graham crackers and melted butter in a bowl until moistened. Pour into a 9-inch springform pan. With your hands press the crumbs into the bottom of the pan and about 1-inch up the sides. Bake for 8 minutes. Cool to room temperature.
  3. Raise the oven temperature to 450 degrees F.
  4. To make the filling cream the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment on medium-high speed until light and fluffy about 5 minutes. Reduce the speed of the mixer to medium and add the eggs 1 at a time mixing well. Scrape down the bowl and beater as necessary. With the mixer on low add the sour cream and vanilla. Fold in the chocolate chips. Pour into the cooled crust.
  5. Bake for 15 minutes. Turn the oven temperature down to 225 degrees and bake for another 1 hour and 15 minutes (DO NOT open the oven door when you lower the temperature. Trust you oven and KNOW that your cheesecake is not burning after 15 minutes). Turn the oven off and open the door wide. The cake will not be completely set in the center. Allow the cake to sit in the oven with the door open for 30 minutes. Take the cake out of the oven and allow it to sit at room temperature for another 2 to 3 hours until completely cooled. Wrap and refrigerate overnight.
  6. *Lowering the temperature and letting it cook for a little longer allows it to cook all the way through without browning it or making too many cracks in the top. Turning off the oven and letting the cake sit inside with the door cracked is a great trick to continue cooking it but it won’t brown or burn.
  7. Remove the cake from the springform pan by carefully running a hot knife around the outside of the cake. Leave the cake on the bottom of the springform pan for serving.
  8. To make the topping heat the heavy cream and chocolate chips in a double boiler over low heat. Once the chocolate has melted and is stirred in remove the bowl from the heat and let it cool. Allow it too cool to room temperature. It will thicken as it cools. But you will still be able to pour it onto the cheesecake. Carefully pour the ganache into the middle of the cheesecake and spread it to the outside leaving about 1/4 of an inch space from the edge. Refrigerate until ready to serve.
  9. I cut a piece of the cheesecake for its ‘photoshoot’ about an hour before church on Valentine’s night. As I was taking pictures I thought it would be great to have a picture of a bite of the cheesecake. And then another bite and another and oh crap I ate the entire slice. And then I proceeded to eat more. I literally ate about 1/8 of the entire cake by the time it was all over. It was good stuff!
